Idle hands turn a Chocolate Peanut Butter Layer Cake into a Trifle

I am blessed with quite a few nieces and nephews; which are wonderful in many ways. It is extra special for Sydney, being an only child, she has had enough cousins to keep from feeling too isolated. We generally invite/ rotate a couple of the cousins  ( there are a total of 12), over during the weekends to spend the night and bake through out the day. On this particular day we were entertaining two of the youngest children, after an hour of negotiating pastries, the both finally settled upon a chocolate graham cracker cake with peanut butter frosting. The cake is youngster friendly, and they...

Daring Baker’s Sheets of Phyllo Dough

Erica of Erica’s Edibles was our host for the Daring Baker’s June challenge. Erica challenged us to be truly DARING by making homemade phyllo dough and then to use that homemade dough to make Baklava. I actually created  phyllo dough and a baklava for a dear friend, whom was frustrated with the choice of baklava where he lived. He proclaimed the little Greek bakery in New york, where lived had tried baklava, while talking to us he explained you could watch the pastry chef pull the dough. I was intrigued to trying The Daring Baker’s challenge. I collect rolling pins from around the...

My Big Fat Greek Baklava with Homemade Phyllo Dough

A close friend of mine, who moved to Colorado from New York and grew up in Greece, asked me if I could bake him Baklava. “Of course” was my answer. Inquisitively I wondered why he could not go to any bakery and buy some, when I asked he proudly exclaimed his grandmother had always used homemade phyllo dough, which he was unable to find in Colorado. When he resided in New York almost all the Greek and Turkish bakeries composed their own dough. He has been so wonderful to both Sydney and I we decided to grant his request. I must admit I have limited experiences with homemade phyllo...

Be Still Brent’s Heart, It is A Chocolate Ricotta Crème Tart

Sydney has a close friend, Brent, who lost his father and mother when he was two; we decided to have him over for Father’s Day. Brent was blessed with friends and family, all whom were willing, able, and ready to help raise him threw his childhood. The honor was bestowed to his God mother and her husband. They loved him as if he was their own. As Brent loves to boast, his God mother was an angel, however the worst baker in the world. Please believe me that is only Brent’s subjective opinion, we have never tried her baked goods.  About two and half year ago, when Brent graduated...

Strawberry Tarts, Forever

Sydney and I are Farmer’s Market addicts. Between the warm Colorado early summer air and the aromatic smells of the produce, the Farmer’s Market becomes almost as captivating as Fifth Avenue (almost!). The strawberries were intoxicating this past weekend; I was elated, and bought more than we needed. Since strawberries are Sydney’s favorite summertime fruit we decide to create a Crème Friache Frangipane Strawberry Tart. Generally we add rhubarb to our tarts, but there didn’t seem to be any rhubarb, and the ginger root looked plump and smelled fragrant. As odd as...
