French Strawberry-Cherry Blossom Macaron Tutorial

French macarons have become a favorite pastry among most of my friends and family. I flavor my shells as well as the filling, therefore when you bite into the aromatic macaron the flavor sensation is amazing! I thought since Sydney will be home during President’s Day weekend (also Valentine’s Day) I would bake a few batches of her favorite flavor..Strawberry Cherry Blossom. Not only will it be a nice treat for Sydney, but French macarons are a perfect edible gift for the special people in your life for Valentine”s Day. The...

Candle Lights On a Lactose-Free Gluten-Free Sugar Cookie

I have been wanting to create a tutorial on the art of scroll piping with royal icing. It is easier to learn on a sugar cookie prior to an entire cake, piping an entire cake can take hours (even days depending on design and layers), while a cookie is not as time consuming.  The candle light cookie was inspired by Eddie Spence’s book The Art of Royal Icing: A Unique Guide to Cake Decoration by a World-class Tutor (this would be a delightful holiday gift). Bertolli contacted me early this month wondering if I might be interested in...

Learn How to Create A Gumpaste Bows on Gluten Free Sugar Cookies Card

I was asked by a friend if I could bake him a batch of gluten free sugar cookies. I have baked several pastries in the past that were gluten free (mostly bread and pastries), but I realized I had never tried to bake a batch of gluten free sugar cookies. I realized their must be a plethora of children who are unable to have gluten in their diet and would love to be able to receive decorated sugar cookies. I felt compelled to be able to devise a well decorated cookie as well as yummy and gluten free. I had been planning to  create Christmas...

Mariposa Lily Cake Spray

I mentioned in the last post Sydney saw Alan Dunn’s Mariposa Lily cake and liked the look; so I created my version of this peaceful spray to adorn the top of a fabric billow weave cake. Mariposa (or “butterfly”) in Spanish are  peaceful beautifully colored flowers that can thrive in harsh environments despite their delicate appearance. Although there are 67 species of mariposa lilies most are found in California. I decided to add Bougainvillea, Asian orchids, and an array of foliage  along with strategically placed sugar...

Sugar Paste Designer Stiletto Platform Shoe Fun

Sydney flew home this paste weekend to help teach a platform shoe class on Friday and demo how to create a sugar paste/ fondant shoe. We hadn’t had the opportunity to work  together since spring break; it was wonderful to create the shoes with her. I had already prepared the pink designer sugar paste heel prior to her arrival the other two we created as we taught the class. The best way to learn how to work with sugar paste and/or fondant is to roll up your sleeves, pin up your hair, and use your hands! We both had a brilliant time with...

Purple Passion Fondant High Heel Shoe

Shoes are the number one accessory; women brag about how many pairs of shoes they have in their closet. Mariah Carey had Mario Buatta design an elegant space with gold-leaf and bleached-wood floors for her stilettos. Although my husband has to share his closet with my left over shoes I do not have a special built room just for my shoes, I would not object to one! I admit I adore shoes, wearing them, looking at them, and shopping for them, so it only seems obvious that a shoe would be a popular cake topper. For the past few years fashion...

Gluten Free Pâte à Croissants

I adore a warm buttery flaky croissant with a strong cup of coffee.  A friend, Nancy  asked me if I could bake some gluten free croissants (she has celiac disease) I was hesitant, but she was persuasive. Sydney explained I should go out of my comfort zone and try to create a flaky gluten free croissant, the worst that could happened is the gluten free croissants would not turn out. I reminded Sydney I am a perfectionist and have a problem with failure, I become panicky. Sydney replied back the only way to learn anything new is to fail and...

Mint-Strawberry Macarons

This past weekend a customer (M.B.) threw a baby shower for her friend, and she wanted aqua colored  macarons. MB gave Sydney and me carte blanche in choosing flavors. First call was to Sydney, she is the  macaron connoisseur of our shop, within 3 minutes Sydney proclaimed strawberry mint! We had our flavor. In order to achieve the aqua color  I mixed sky vert pomme & citron; however the color turned a beautiful full body green due to the pink color of the strawberry powder. Panic consumed me, MB wanted aqua, they needed to be more...

Poinsettia Cake, A Peek into our Holiday Traditions

Poinsettias have become a staple during the holiday season, the plant is sold every year, and most homes have a few. It has become a family tradition to design a special cake that represents the season, last year we created a Buche de Nöel (Yule Log), I suggested we design another this year, but Sydney wanted something spectacular! Thinking of a spatular cake isn’t as easy as you think. As I was thumping the front of my head saying “think, think, think,” yes just like Winnie the Pooh, I glanced over to fireplace and...

Fleur de Sel Caramel Apple Macarons, The Perfect Halloween Treat

I am so excited to share this flavor of macarons with you; Fleur de Sel Caramel Apple Macarons. Every year in mid September to early October we pick apples and dip them in caramel to hand out to the special people in our lives; this year Sydney and I wanted to create the luscious flavor in a macaron. The fist step was to write down the essence of a caramel apples, the first taste to the last on our palates. That first crisp apple sensation, followed by the sweet gooey caramel, and finally the fleur de sel lingers on your taste buds. Now we had...
