Don’t you just want one?

With the playoff games tomorrow, being from Denver, and a Payton Manning fan we are having a small get together. Everyone loves my rose buttercream cupcakes piped on my rose flavored cupcakes. It might be the rose liqueur. I thought I would share a short tutorial on using the Wilton 1M piping tip/nozzle. I prefer the roses, but the guys tend to eat the swirls first (there is more frosting)!

Piping Roses and Swirls:

The open star tip is extremely versatile. You can pipe a large shell border plus much more!

Equipment:

  • Wilton 1M, Sterntüllen Grössen 11, B Prince Open Star Pastry,  ateco 847, or Matfer Bourgeat S/S Star Shapes Pastry Tips (either of these tips will give you both results)
  • 1- medium pastry bags

Materials:

  • Italian buttercream
  • Lemon yellow food paste,CM
  • 1- recipe Rose Vanilla Cupcakes, above

Colour your buttercream yellow and prepare your mise en place.

Open star tip/nozzle mise en place

Color the buttercream after it is made, choose a color of your choice, add 2 drops at a time to achieve desired color. We have a few Patriots fans joining us, therefore I chose yellow (neither team colours have yellow)! The cupcakes are neutral!

The Bronco’ s colours: Orange and Blue.

Patriots colours: Blue, Silver, Red and White.

Create a  Swirl Effect:

Prepare your pastry bag with tip/tube and coupler if needed and place the buttercream in a pastry bag.

To create a swirl start on the outer edge of the cupcake/mini cake, holding the piping bag at a 90 degree angle, and turn clockwise.  Work inward towards the middle, keeping even pressure. When you and the tip/tube reach the centre release pressure and gently lift.

Create a Rose or Rosette Effect:

 To create a rose/ rosette on the cupcakes/mini cakes have your piping bag prepared with desired color. Place the tip/tube in the centre of the cupcake/mini cake, holding the piping bag at a 90 degree angle, and turn clockwise working toward the outer edge, keeping even pressure. When you and the tip/tube create the last swirl of the rosette release pressure and gently pull the tip/tube away.

Both effects produce an incredible design; however completely different.

It would be brilliant to colour your buttercream with your favorite team colours, I didn’t want to have a war of cupcake team colours.
